agar GS® is agar powder extracted from red seaweed (Class Rhodophyceae). It is a food additive specially designed to giving structure and stability to confectionary aerated products.
Properties & Functionality:• Forms a strong and stable gel at low dosages even in high fat formulations
• Helps to increase overrun both in extruded and deposited products
• Excellent heat resistance of the final product with reduced syneresis
• Contributes to the prevention of cracking in chocolate glazed products
