Amaranth, also known as “Kiwicha”, is a pseudo-grain grown in Peru that is high in both protein and fiber, and is gluten-free. Amaranth grain is particularly high in lysine, an amino acid found in low quantities in other grains. Amaranth has a light and nutty taste which makes it a perfect addition to cereals, breads and other baked goods
