Böcker F categorised under direct method dry products is dried wheat sourdough concentrate for flavour-rich white bread and rustic mixed white bread. It is 100 % natural. It is quick, safe and convenient to use. It has aromatic taste with full wheat flavour. It has excellent and long-lasting crispiness. A special selection of raw materials and production techniques produces a much higher concentration of flavour precursor components than it would be possible with conventional wheat sourdoughs. These aroma precursors are formed during a natural fermentation process that skilfully uses selected lactic acid bacteria. It can fully replace the fermentation of a wheat sourdough. It is ideally suited for all bakery products. It emphasizes the special character of all wheat-based baked goods and mixed breads with a rye content up to 20 %. Itis suitable for the production of mixed wheat breads as Bakers percent of 2 % eliminates the need for a time-consuming sourdough fermentation. It contains ingredients such as wheat flour, wheat malt and starter cultures.
