BP 95 as a multi- and high functional ingredient.
BP 95 is derived from animals which have been found fit for human consumption by ante- and post mortem inspection. BP 95 is a porcine collagen high functional protein with a high level of protein and a low content of fat. BP 95 is a functional animal protein with a gel forming capacity of maximum 1:30. The 100 mesh particle size, unique for comparable protein sources, gives the protein cold swelling properties and increases viscosity in water-solutions.

Where to use BP 95
Because of the neutral taste and functional properties, BP 95 can be used in all type of emulsified products like liver pastries or (dry) sausages as well as in minced meat products and canned products. Due to the small particle size BP 95 can also be used for injection or tumbling purposes. BP 95 has excellent emulsifying properties both under cold and hot conditions and will reduce the risk of jelly and fat separation in comminute meat products. BP 95 is swelling in combination with cold water and is able to form a spread able mass with a low dosage of cold water.
