Origin: Arriba. It is mild, buttery, milk chocolate which smells slightly of vanilla sticks and even with fleeting impressions of white chocolate. In terms of taste it is tremendously creamy, then quite velvety in texture. It gives fairly rich impressions of other things like yoghurt, nougat, vanilla and cream. It gives fine vanilla aftertaste with accents of almonds and hazelnuts. Application: sauces & glazings, enrobing pralines, hollow figures, moulding pralines, fillings & ganaches, decorating, ice, aromatise.
