Innophos, Inc. produces a wide range of products under the food market which includes curavis 350®. It belongs to meat, poultry and seafood category. It is a special blend of sodium phosphates designed for rapid cooked sausage processing where a lower pH blend will allow fast cured color development. Advantages: Excellent color development and stability, enhanced protein binding that allows greater formulation flexibility and lower costs, stabilized emulsion provides "over-chop insurance" that avoids "fat capping", "slackens" the emulsion for easier stuffing, fewer air pockets and more uniform links (less over-pack), good "bite" that avoids rubbery texture associated with the use of STP.
