Anthocyanins are natural pigments (E163) that appear in many berries and vegetables like grapes, red cabbage, elderberry, aronicum, black carrot. Anthocyanins are resistant to temperature effects, light and soluble in water. Changing the pH level alters the shade and stability of the colour: from orange in acidic medium to burgundy shade in alkaline. Stable at pH = 2-4.5. Anthocyanins are used for colouring of alcoholic and non-alcoholic beverages, jams, canned fruits, jellies, all kinds of confectionery and ice cream. Colour - from red to bordeaux.
