EDIFETT HWP whipping agents are spray-dried emulsions, based on palm kernel oil or coconut fat, emulsifiers, milk ingredients and carbohydrates. These whipping agents can be used in almost all aerated dessert applications such as: mousses, aerated desserts, non-dairy products, ready-to-eat desserts, artisan and homemade ice cream, soft-serve ice cream, milk shakes, cake fillings and decoration. Aerated products made with EDIFETT HWP whipping agents have the following properties: cannot be over-whipped, very high overrun and foam stability, shorter whipping time, pleasant creamy flavour.
