It can bind 10-12 times its weight of water and will keep it even when a product is heated or cooled. It gives texture and retains moisture. Application: to increase yield in meat products, to add texture to ketchup and sauces, to retain water in baked goods, to add fibre to any kind of product. Appearance: light brown powder.
