Product description

Galastar 022-sl is a mixed culture of staphylococcus carnosus and lactobacillus sakei recommended for the production of north european type of sausages at relatively higher fermentation temperature. The presence of lactobacillus sakei ensures a fast acidification while staphylococcus carnosus brings a mild aromatic profile and a stable red colour. The final PH can be corrected by adjusting the amount of fermented sugars added to the meat preparation. It is presented in the form of a convenient and easy-to-handle freeze-dried powder. Appearance: white to beige powder, carrier: maltodextrine. Dosage: 20 g (= 1 pouch) for 100 kg of meat mince.
