Gelita supplies various types of gelatine product which gives gummy bears their consistency and form and yogurts their stability and creamy texture. Foodstuff applications are perhaps the best-known examples but certainly not the only area for the collagenous protein. It is a natural foodstuff. Chemically, it is a pure protein. It is free of GMO components, contains neither gluten nor cholesterol, has no fat or carbohydrates and has a low allergenic potential. It has visco-elastic properties. The advantages of Gelatin include higher melting and setting points, quicker setting times, Lower quantities required, lighter colors and neutral odor, taste, concentration of the gelatine solution, temperature, gelling time and temperature, thermal pre-treatment and duration, pH of the solution and salt content. The available particle sizes are 0.1 mm 140 mesh 'dust' milling (Staubmahlung), 0.5 mm 35 mesh finely milled, 0.8 mm 20 mesh standard milled and 3 mm 6 mesh course milled. Gelatine is highly specific used in the most varied of application areas such as edible powder gelatin, leaf gelatine (red/white), instant gelatin, collagen, peptides, collagen and functional blends.
