Gellan Gum is an odourless cream-coloured powder. It is a new multifunctional gelling agent (E418). Gellan Gum is a water soluble polysaccharide produced by the aerobic fermentation of the micro-organism Sphingomonas elodea (formerly known as Pseudomonas elodea). Packaging: Bags of 25 kg net. Application: Sugar Confectionary, Jelly Desserts, Dairy products, Fruit preparations, Fluid Gels.
