Product description

Gely xan is xanthan gum, a natural polysaccharide of high molecular weight, produced by the fermentation of glucose with the microorganism xanthomonas campestris. It belongs to hydrocolloids category. Its chemical structure is built by D-glucose monomers joined among them by beta (1-4) links. One of every two glucose units is linked to lateral chains of mannose and guluronic acid. It is soluble both in cold and hot water, stable to a wide interval of acidity and resists very well freeze-thawing processes. It has synergy with other hydrocolloids, specially galactomannans with whom it forms gels. The high viscosity that it gives, the pseudoplastic behavior of its dispersions and the stability in a wide pH interval makes it very suitable for products as ketchup sauce, salad dressings, mayonnaise, ice creams, dairy desserts, low calorie products, among others.
