Guar is a natural polysaccharide extracted from the endosperm of the guar seed (Cyamopsis tetragonolobus), and is obtained by a mechanical and thermal process. It mainly consists of galactopyranose and mannopyranose units combined by means of glucosidic linkages. It has thickening and water retention properties. It synergies with xanthan gum. It proposes all food grades of guar gum (E 412), low and high viscosities as well as the derivatives for technical applications (carboxymethylguar, hydroxypropylguar).
