HI-SHIELD is a range of natural antibacterial agents and natural flavor enhancers developed by HI-FOOD thanks to international partners in fermentation and extraction technologies. 
The range is composed by 
  • HI-SHIELD P, allergen free product based on fermented corn
  • HI-SHIELD WII, gluten based product made from fermented wheat
  • HI-SHIELD COMPLEX FE, allergen free product based on special vegetable extract from bitter orange  

They are innovative shelf-life extenders and flavor improvers for all bakery products, salad dressings and for food applications in general, with mild taste and weak acid notes. They are designed to be effective against molds. But they work also against other bacteria like Bacillus strains (in bakery the so called “ropes”) and against an alterative yeast called Pichia anomala. 

It’s interesting to quote the possibility to apply HI-SHIELD COMPLEX FE as natural shelf life extender in meat products too, especially for bugers, fresh sausages and meatballs.

Regarding HI-SHIELD WII , It’s interesting to highlight the technical and economical advantage against conventional fermented wheat flours. HI-SHIELD WII is obtained from pure advanced fermentation processes and it is a natural source of highly concentrated organic acids with a strong competitive position on the market (cost-effective).
