What to do with the stems that are cut off the mushrooms? This amounts to about 25% of the mushroom and is never used for fresh or preserved mushrooms as it is not visually appealing to consumers. Throw them away? What a waste! They are still full of mushroomy goodness. We transform wastefulness into pure tastiness. Every day, trucks full of mushrooms are driven to Belfeld in Limburg, where Scelta Umami is based. Here we extract flavourings from these left over mushroom bits and process them in our “Waste2Taste” production process into a high quality mushroom concentrate and powder. A completely natural product, derived from pure mushroom juice without any added flavours or flavour enhancers. Our concentrate serves as a mushroom base with fresh and authentic taste for wet soups, sauces, bouillons, stocks and ready meals; the spray-dried powder can be used for e.g. dry soups and sauces.
