Natamycin is one of the most widely used antifungal agents in the foodstuffs industry, particular in the cheese industry. Natamycin is produced by fermentation of Streptomyces natalensis. Even in small amounts it is effective against moulds and yeast. Natamycin is available as an odourless and cream coloured powder. It can be instantly converted by the customer into a ready-to-use suspension. It can also be combined with potassium sorbate. The antifungal suspension be used for spraying, brushing and dipping.
