OvoLact 34 ensure users would not only reduce their costs, but would be provided with the cleanest possible label declaration and characteristics perceived to be as good, or better, than whole egg by the consumer. It is produced purely from milk, OvoLact 34 is cleverly formulated to perform the emulsification and gelling function in cake batters which are normally provided by whole egg. It is in regular use by major plant bakeries following rigorous trials against other starch, soya and milk protein based alternatives.
