Partially soluble fiber extracted from the husks of Plantago ovata seeds.It is enzyme resistant and has an immediate and high-water binding properties. It can be used in baked goods thanks to its ability to bind water, give structure, increase shelf-life, improve extension and softness and as a substitute for guar; in vegan and dietary foods as a fiber enrichment; in meat products to create binding and emulsifying systems.
