It has novelty that hard compounds can be obtained, despite a lower saturated fatty acid content. It received at FIE 2009 the award for the most innovative confectionery product. It is also categorised under filling & cream fats. It is a new range of filling and cream fats with very low saturated. It provides reduction of saturated fatty acid content by up to 60%. It has similar texture compared to traditional hard fats. It is non trans and has very good melting properties. It requires tempering. It has high crystallisation speed and has very good heat resistance. It is avialble in two types ie redusat C 25 G and redusat S 40 G. It is recommended for fillings and creams. It is also recommended to reduce drastically the level of saturated fatty acids in biscuit and wafer creams.
