They are made from phosphoric acid, Polyphosphates are used as complexing agents, melting salts and stabilizing agents. Of all the phosphates approved as food additives, polyphosphates are the most potent protein dissolvers. Moreover, they are highly suitable for use as melting salts. Phosphates are available in the form of a colorless or white crystalline powder as well as crystals or granules.
