HELM AG markets a selected range of phosphates. Depending on their technological characteristics, they are used for different purposes. Phosphates enhance many characteristics of processed foods, such as structure, taste, juiciness and color. Used as melting salts, for example in the production of cheese spreads, they improve the swelling capacity of proteins, thus preventing the leakage of fat or water from the product. Phosphates are available in the form of a colorless or white crystalline powder as well as crystals or granules. They are made from phosphoric acid. The phosphates marketed by HELM AG include the following: E 341, E 450, E 452 and E 451. The latter E-number includes triphosphates such as Sodiumtripolyphosphate – abbreviated as STPP - which is described here. Triphosphates are used as complexing agents, acidity regulators, melting salts and stabilizing agents. The ability of triphosphates to dissolve proteins is more pronounced than that of diphosphates. In addition, triphosphates are very good ion exchangers. Packaging: 25 kg bags with inner PE liner. Applications: The food industry uses phosphates in many different fields in order to enhance the quality of ready-made products. Phosphates are most important for companies operating in the meat, poultry, seafood and baking goods industries, as well as in dairies (incl. the production of cheese spreads). The use of triphosphates in limited quantities is restricted to certain foods, including meat products, cheese spreads and cheese spread products, desserts, ice cream.
