Lecithin is a naturally occurring substance belonging to the group of phospholipids. It is used in the food industry as an emulsifier and as an antioxidant. Lecithin was originally produced from eggs. Today soybeans and sunflower seeds form the basis of commercial lecithin production. Lecithin is found in numerous foods. It is sometimes used as an emulsifier in products of low miscibility in order to obtain a homogeneous structure, in the production of chocolate or margarine, for example. Lecithin also enhances the stability of foods, with one field of application being low-fat salad dressings. In instant powders, lecithin acts as a dispersant to enhance the solubility of the powder.
