Manufactured by Dow, the world leader in cellulose derivatives, Methocel is a family of stabilizing the cellulose-based and can be used to make sauces, forneados and fried products, baked goods, dairy products and beverages.

It is soluble in cold water and has the ability to reversibly gelling under the influence of heat retaining structure and characteristics of the products. It also promotes good water retention and is active in a wide pH range. The Methocel also has other properties like asynergy with modified starch, great stability for emulsions, excellent film formation and stabilization, foam and replacement of gluten.
