HELM AG markets a selected range of phosphates. Depending on their technological characteristics, they are used for different purposes. Only 1% of the entire phosphate consumption worldwide is used as a food additive. Phosphates enhance many characteristics of processed foods, such as structure, taste, juiciness and Colour used as melting salts, for example in the production of cheese spreads, they improve the swelling capacity of proteins, thus preventing the leakage of fat or water from the product. The phosphates marketed by HELM AG include the following: E 341, E 451, E 452 and E 450. The latter E-number includes diphosphates such as Tetrapotassiumpyrophosphate - abbreviated as TKPP - which is described here. Diphosphates are characterized by a particularly strong complexing action and are therefore used primarily as binding agents, as melting salts or as raising agents. In many foods they also prevent the unwanted precipitation of sparingly soluble calcium compounds. Packaging: 25 kg bags with inner PE liner. Applications: The food industry uses phosphates in many different fields in order to enhance the quality of ready-made products. Phosphates are most important for companies operating in the meat, poultry, seafood and baking goods industries, as well as in dairies (incl. the production of cheese spreads). Diphosphates in predetermined maximum limits are approved for use in certain foods, including meat products, cheese spreads and cheese spread products, desserts, ice cream as well as flours and baking mixtures.
