Textured soy concentrate is a source of vegetable protein supplementing the main protein raw material in meat and fish food products. The product has a high nutritional value with amino acids composition very close to the proteins of the muscles tissue. Textured soy protein concentrates feature high functional and technological qualities: hydratation level is 1:4.5, the speed of hydratation is 15-20 minutes at +2- 4°?; fat binding ability is more than 200%; increased thermo stability.
