ULTRA-SPERSE® 2000 is a high performance, cold water swelling modified food starch derived from waxy maize. It is a white to off-white powder and is particularly well suited for instant food preparations where high viscosity and creamy mouthfeel are desired. It exhibits excellent dispersibility and imparts superior sheen and smoothness when compared to traditional pregelatinised starches. This product is often used in instant cream style soups, cheese sauces, and savoury gravies that are to be microwave reconstituted or kept on a steam table for long periods of time.
