VIN’APPLE Purée 44 is an apple purée with a high dry matter (44%), specially designed for the garnishing of puff pastry products and tarts. It is recommended for its excellent stability during cooking and freezing. VIN’APPLE Purée 44 contains natural pectine from fruit which allows to dilute it with water, without loosing stability. From VIN’APPLE Purée 44 you can lower the dry matter by dilution, depending on your application. For instance, you can dilute VIN’APPLE Purée 44 till 31-33% for desserts applications. For drinkable apple purée a dilution at 29-31% is recommended. Diluting VIN’APPLE Purée 44 allows you to make a natural apple product and to save cost by adding water on your raw material.
