Xanthan Gum is an odourless cream-coloured powder. It readily dissolves in cold and hot water, the solutions are very viscous, highly pseudoplastic and very resistant to pH-variations, enzymatic degradation and temperature variations. Xanthan Gum disposes of excellent freeze / thaw stability and is compatible with all commercial thickeners and alcohol. Xanthan Gum is a complex long chained polysaccharide with a high content of trisaccharide side chains. The contained sugar monomers in a ratio of 3:3:2 are glucose, mannose and glucorinic acid. The conformation is as a right handed, fivefold helix. Xanthan Gum is produced by fermentation of Xanthomonas Campestris. Packaging: Cardboard boxes or bags of 25 kg net. Application: As thickener, stabilisor, emulgator, suspension media or foam stabilisor in food, fodder, cosmetics, pharmaceutical products and for technical applications.
