Xanthan gum is an anionic polysacharride obtained by fermenting a carbon hydrate with natural strains of Xanthomonas campestries. It contains d-glucose and d-mannose as well as d-glucuronic acid and pyruvic acid. It has suspension properties and interacts with other hydrocolloids.
