It is widely distributed in the Andean region of South America.

History

It was domesticated by the indigenous people of the Andes, and is nowadays widely cultivated for its edible roots throughout Andean South America and other countries.

Properties

It helps absorb calcium and vitamins lessening blood sugar peaks from eating sweet foods. Prebiotic effect on intestinal mucosa, protective effect on risk reduction of colon cancer. Potential treatment of constipation.

Recommended uses - Yacon Syrup

As a liquid product, it can be pour in juice, milk, yogurt and smoothies. Furthermore, is used as an ingredient for baking, desserts and additive of the fruit salads.

An excellent alternative to low-calorie diets for diabetic patients.
