Wander ag offers awide range of products which includes diastatic malt extracts. Features: it is a group of enzymes (mainly alpha- and beta-amylases) which naturally occur in malt. These build the starch into sugars such as maltose and glucose, which act as nutrients for the yeast. Diastatic malt extracts are used, inter alia, to accelerate the fermentation process during dough management. They lead to a better crust flavor and to a shiny pastry surface. Wander produces barley malt extract with and without diastase in liquid and dried form. Barley malt with diastase contains varying amounts of enzyme activities. Contact us for more information.
