  • Healthdream glucoamylase is an exo-type starch hydrolase that is refined and extracted through deep fermentation and cultivation of selected Aspergillus niger, followed by microfiltration, ultrafiltration, and vacuum freeze-drying techniques. Glucoamylase can rapidly liquefy starch into low-molecular-weight dextrins and is used in industries such as wine-making, starch sugar, monosodium glutamate, antibiotics, citric acid, etc..
  • The main function of glucoamylase is to hydrolyze the α-1,4 glycosidic bonds in sequence from the non-reducing ends of carbon chains such as starch, dextrin and glycogen, and cut off glucose units one by one. For amylopectin, when encountering the branching point, it can also hydrolyze the α-1,6 glycosidic bond, thereby hydrolyzing all the amylopectin into glucose.
