Scelta Mushrooms, a small Dutch company, has been named overall winner of the Fi Europe Innovation award for its Scelta Taste Accelerator (STA) flavour enhancer/sodium reducer.

Scelta Mushrooms, a small Dutch company, has been named overall winner of the Fi Europe Innovation award for its Scelta Taste Accelerator (STA) flavour enhancer/sodium reducer.

STA is said to use the natural power of umami to increase flavour and reduce sodium in processed foods. According to the company, STA effectively addresses a problem many food companies are struggling with in a 100% natural way. In the Western diet about 80% of salt intake comes from processed foods, such as bread, meat and cheese. Food companies are responding to this and have made salt reduction a top priority. Unfortunately, Scelta notes, reducing salt in food products also reduces flavour and palatability in the initial phases of the reduction of salt intake. Scelta has developed a line of sodium reduction ingredients to aid the food industry in the quest to lower sodium intake without losing taste through the natural power of umami.

Scelta Taste Accelerator can be used in a wide range of products.

The Fi Innovation Awards honour companies and professionals for their ability to demonstrate, stimulate and inspire industry advancements. These awards recognise major contributions to the food and beverage industry through nine categories in addition to ‘The Most Innovative Food Ingredient' as 2015's overall winner of the Fi Innovation Awards.
