Sunflower lecithin is a kind of phospholipid contained in sunflower seeds. This fatty substance is obtained by dehydrating sunflower seeds and separating them into oil, gum and other solid parts. Lecithin is a byproduct of gum dehydration during this process. It's an emulsifier that gives food its consistency. Sunflower lecithin is organic and is usually cold pressed.
