Debranzyme X is a food grade Pullulanase made from a refined strain of Bacillus subtilis through liquid submerged fermentation. Pullulanase is an enzyme that catalyses 0-1,6-glycosidic linkages in liquefied starch to produce linear oligosaccharides. It is used as a processing aid in the manufacture of starch hydrolysates (maltodextrins, maltose, andglucose) and high fructose corn syrup (HFCS), and in the production of beer and potable alcohol.
