Invertase L is a food grade enzyme produced from Saccharomyces cerevisiae through submerged fermentation. It breaks down sucrose into glucose and fructose . Invertase L can be used for the production of invert syrup starting from sugar beet or sugar cane and prevent the sugar in confection from crystallization in fondants or chocolate-coated candies with soft centers. In Juice industry, it can be used in the production of some juices to decrease sucrose content. In baking industry, it can also be used for fresh keeping and extending shelf life.
