Isomalt is a sugar-free sweetener discovered during the 1960s. It is a sugar alcohol commonly used as a less sweet alternative to sugar
It is obtained by converting sucrose into isomaltulose (palatinose) by enzymatic method, catalytic hydrogenation, concentration, crystallization and separation
Isomalt is white, crystalline, and odorless. It is available in two forms: granular and powder. Granular is often used in hard candies while powdered is most commonly used in bakery related applications
