For our real Lübecker Marzipan, we use freshly peeled, aromatic almonds and grind them through two counter-rotating granite rollers until they have the defined structure and fineness and a smooth mouthfeel. We roast our marzipan traditionally in open copper roasting kettles in a complex process. It gives our products their unmistakable taste and sets them apart from other marzipans.
The Lübecker Marzipan-Fabrik is one of the last marzipan manufacturers to use this process, thus achieving the uniqueness of Lübecker Marzipan.
