Rice Protein

Rice protein is mainly composed of albumin, globulin, alcohol-soluble protein and gluten, and the endosperm protein in rice residue is mainly composed of albumin (4%-9%), salt-soluble globulin (10%-11%), alcohol-soluble gluten (3%) and alkali-soluble gluten (66%-78%).Rice, rice grains, rice bran and other raw materials can be used to prepare rice protein. Around the development and utilization of rice protein, researchers have proposed a variety of different preparation methods, mainly: solvent extraction, enzymatic extraction, alkali extraction, acid extraction, physical extraction and composite extraction.
