Sodium Alginate is the sodium salt of alginic acid
extracted from the cell walls of brown algae, Phaeophyceae, with chelating
activity. It is widely used in molecular gastronomy. It is a white powder,
odourless and tasteless, slowly soluble in water forming a viscous solution.
Applications
Spherification, Soy meat, Lactic drinks, Noodles,
Cookies, Ice creams, Sauce, Cheese, Yoghurts, Breads, Puddings etc
Other than an Food Industry It is also used in Pharma,
Cosmetics and for making Impressions (Dental, Hand & Leg, Study Models,
