Sodium Alginate is the sodium salt of alginic acid extracted from the cell walls of brown algae, Phaeophyceae, with chelating activity. It is widely used in molecular gastronomy. It is a white powder, odourless and tasteless, slowly soluble in water forming a viscous solution.

Spherification, Soy meat, Lactic drinks, Noodles, Cookies, Ice creams, Sauce, Cheese, Yoghurts, Breads, Puddings etc
