The protein transition is accelerating, spurred by changing laws and regulations. Retailers will soon be required to report their efforts to reduce their CO2 footprint. They can do this by sourcing differently (e.g., more locally), adjusting refrigeration settings, and optimizing logistics. However, the most impactful change is replacing animal-based ingredients with plant-based ones. The challenge for retailers is to entice their customers to choose a plant-based alternative. This requires collaboration between retailers and their suppliers, such as meat processors and butchers, to answer the question: what can we achieve together?
A Tasty Alternative
Encouraging consumers to choose a (partially) plant-based alternative is achievable, but taste is key—the alternative must be delicious. A full transition to plant-based food is a large step, and not everyone wants to give up meat or wait for the introduction of lab-grown meat. The hybrid option currently offers the best of both worlds and a realistic interim step. In consumer communications, good taste, bite, juiciness, and color should be the primary focus to increase the willingness to switch.
