The recognition of gluten intolerance
The recognition of various forms of gluten hypersensitivity is increasing. This is because both the market and scientists are making more efforts-to ascertain just how widespread gluten intolerance is. The increasing interest in this problem has led to a continuous rise in the popularity of gluten-free food and to the availability of an expanding range of gluten-free options in supermarkets and restaurants.
What are the changes in the market
In the past gluten-free meant compromise in terms of taste, quality and choice. Nowadays the choice is becoming both wider and wider and far more enjoyable. In many supermarkets the gluten-free product offering has not only moved from a small corner somewhere at the back but has become far more diverse. Gluten-free bread is available in the bakery department, but now the supermarket shelves also display gluten-free breakfast products, snacks, pizzas, pastas and even beer.
International Coeliac Day
To generate awareness of gluten intolerance 16 May has been designated International Coeliac Day. Coeliac disease is an auto-immune disease in its own right. Although the signs and symptoms associated with gluten allergy, gluten intolerance, gluten sensitivity and coeliac disease are similar, whereas someone who has a gluten intolerance or gluten sensitivity cannot tolerate gluten well, someone with coeliac disease cannot tolerate any gluten at all. In all cases the ‘culprit’ is the allergen gluten. Gluten is found in most grains, including wheat, rye and barley, and is therefore present in bread (products), biscuits, cakes, pastries and pastas.

Gluten-free
Although finding out whether a product contains allergenic ingredients can sometimes be difficult, the presence of gluten is often stated correctly on product labels.
