Uelzena – Sustainable dairy ingredients, ‘Made in Germany’

Uelzena is a dairy cooperative with four production plants and two sales units located in Northern Germany. At this year‘s FiE show in Frankfurt, Uelzena will not only present its specialised dairy ingredients range for the chocolate, confectionery, and bakery industry, but also its comprehensive contract spray-drying services for food ingredients and infant food components. All visitors are invited to visit Uelzena in hall 3.0, stand D80.

As a recognised milk specialist for the food industry with a strong B2B focus, Uelzena produces milk-based ingredients like skimmed milk powder, anhydrous milk fat, sweetened condensed milk, cream and cheese for European and international customers. Uelzena sources the majority of milk from its own contract milk producers in Northern Germany. All ingredients are produced directly from fresh milk or cream – free from any food additives.

Dairy products and milk fat are valuable and functional ingredients

Milk-based ingredients, and milk fats in particular, naturally provide a good flavour in the end product. Many flavourings are also fat-soluble and only develop their full flavour in combination with fat. However, they also have a major influence on certain properties such as the melting behaviour of chocolate and chocolate bars or the mouthfeel when eaten. While some vegetable fats with higher melting points, for example, leave an unpleasant greasy film on the tongue, the melting point of milk fats is below human body temperature, meaning such chocolate melts pleasantly in the mouth.

Exceptional milk fat products

The main milk fat products of Uelzena are lactic butter, sweet cream butter, and anhydrous milk fat (concentrated butter). When it comes to anhydrous milk fat, Uelzena is the largest manufacturer in Germany and one of the major producers in Europe. But besides this standard butter and butterfat qualities, Uelzena can provide very special and unique milk fat products that other dairies are not able to produce. Using special technologies like a fractionation and a deodoration plant, Uelzena can develop highly customised milk fat products. The separated single milk fat fractions (oleines and stearines) can be recombined to produce customised milk fats with precisely defined properties – for example, with regard to melting point, degree of hardness or melting behaviour. And the deodoration plant allows for the production of a completely white AMF. This product is used for the recombination to milk products and cheese as well as an ingredients for sweets, biscuits, and chocolates, if these are to feature very light-coloured fillings.

Individual milk (fat) product developments

A very special service is the development of individual products and recipes for customers in the baking, confectionery or food industry – e.g., butterfat with added vegetable fats, customised milk fat compounds, or adapted packaging contents and options. This results in products that are specially optimised for the respective application and the customer's existing processing technology.

Skimmed milk powder in focus

When it comes to milk powder, Uelzena supplies low heat and medium heat skimmed milk powder for chocolate and confectionery products as well as for the production of recombined milk products. Together with partners, Uelzena operates one of the largest and state-of-the-art spraying towers at its production site Neumünster, where it is able to produce up to 60,000 tons of skimmed milk powder each year.

Specialist for sweetened condensed milk

WS Warmsener Spezialitäten GmbH, one of the largest manufacturers of sweetened condensed milk, is part of the Uelzena Group and supplies major brand manufacturers with sweetened condensed milk and cream. The sweetened condensed milk has a nice smooth texture, a clean taste without any ‘cooked’ flavour, and is technologically resilient to further processing. The wide product range extends from classic sweetened condensed milk with halal, kosher, organic or Fairtrade quality seals, through to mixed recipes with added vegetable fats.

New spray-drying plant for contract drying

Spray-drying has been one of Uelzena's core competences for almost 70 years now. First started with a small spray tower for drying milk powder, Uelzena has developed into a specialist in the spray-drying of a wide range of food ingredients and components for infant food. After a two-year construction phase, the newest spray-drying plant ‘Tower 12’ went into operation last year. It is designed for the spray-drying of vitamins and minerals, as well as other ingredients, under the highest quality and food safety standards.
