These products are manufactured by considerded as the most preserving and optimal process of drying - freeze-drying process that consists of sublimation of water vapour from products with the omission of the liquid phase - conducted in low temperatures with high vacuum conditions - water is removed in 98%.
Freeze-drying process makes the final product very concentrated – e.g to obtain 1 kg of freeze-dried strawberries around 11 kg of fresh fruit have to be processed.
