activity (Aw) of food is the ratio between the vapor pressure of the food
itself, when in a completely undisturbed balance with the surrounding air
media, and vapor pressure of distilled water under identical conditions. Most
microbes do not grow at Aw below 0.6. Therefore, Aw is an important indicator
for food safety and food quality. Besides, low Aw could also offer shelf
life extension of dry probiotics products.
