processing conditions while supporting the clean label your consumers
increasingly seek and expect.
In UHT dairy applications, such as puddings, yoghurts and desserts, it can
deliver excellent tolerance while imparting a creamy, rich mouthfeel and
short texture. In fruit fillings, NOVATION® Lumina 0100 can provide excellent
sheen and clarity even following long-term heating, storage and freeze/thaw
cycles.
For soups and white sauces, its pale colour can impart an extra brightness
to your products and in dressings, NOVATION® Lumina 0100 can enable you to
build smooth, short, stable textures with excellent stability.
Offering the shelf life and freeze-thaw stability process tolerance of
highly cross-linked modified starches, NOVATION® Lumina 0100 can withstand
high-temperature processing through scraped-surface, tubular and plate heat
exchangers, direct steam injection, homogenisation, colloid milling and
vacuum cooling.
