Enzyme-treated stevia is produced by transferring the glucosyl group to various steviol glycosides during the activation of glycosyltransferase with dextrin as a substrate and the stevia extract as the receptor. Enzyme-treated stevia contains up to 15 glucosyl groups and thus improves the bitter aftertaste of stevia extract and improves acceptability. As such, it is widely used in almost all types of food products.
