One focus of this year's FiE will be enzymes for baked goods, especially for wafer production, to show the positive effects on crispness and baking times. In addition, SternEnzym presents the phospholipase enzyme, which leads to an optimization of the characteristics of pasta filata cheese, such as mozzarella!
