Sucrose stearate is a non-ionic surfactant, which is stable under weak acid or weak base conditions. It contains a strong hydrophilic sucrose hydroxyl group and a lipophilic fatty acid group, so it is an excellent emulsifier. Now we have sucrose stearate HLB value from 1-18. APPLICAITON : drinks ,bakery, fats.oils and emulsified fat products, candy,chocolate and chocolate products,cereals,condiment and so on.
